Shay Mitchell, Emily on PLL, shared how to make her Pumpkin Spice Raisin and Walnut muffins when she was a guest on the Rachael Ray Show. The recipe is from her novel Bliss. (Shay also talked to Rachael about working with Jennifer Aniston on the upcoming romantic comedy Mother’s Day).
The recipe calls for cinnamon, ginger, allspice and nutmeg to give it that perfect fall flavor. Of course, you can't forget the pumpkin purée. Shay also threw in some chopped walnuts and golden raisins.
Shay used apple sauce and maple syrup instead of sugar to make the muffins healthier. She also used gluten-free baking flour and almond milk.
